Looking for healthy oatmeal recipes? Well here is a start. Oatmeal is supposedly heart healthy, and a good addition to our diet.
I just returned from a trip to visit my son and daughter-in-law, and they served up some awfully good oatmeal breakfasts. I am not accustomed to eating a lot of oatmeal, but have since then decided it would be a healthy change. One of my favorite oatmeal breakfasts was simply cooking oatmeal in milk and adding some coconut. What a creamy rich tasting breakfast.
One of my favorite ways to eat oatmeal is with sliced peaches. It is absolutely delicious. Since I am always trying to cut back on my sugar intake, this option of adding peaches or other fruits take place of adding sugar. Another breakfast favorite is our whole wheat oatmeal pancakes with blueberry’s. So delicious! I will post this recipe below.

Also in my searching for delicious oatmeal recipes, I came across this post from somethingsswanky, “75 Delicious Ways to Eat Oatmeal for Breakfast“. I can’t wait to try some of these recipes. Maybe I will set a goal to try a new oatmeal recipe 3 times a week for the next month or so. Please comment if you have a favorite oatmeal recipe that you would like to share.
Our Family Favorite “Whole Wheat Oatmeal Blueberry Pancakes”
1 cup whole wheat flour
1 cup quick rolled oats
1 tablespoon brown sugar
1 teaspoon soda
1/2 tespoon salt
2 eggs, slightly beaten
1 tablespoon oil
2 cups buttermilk
fresh or frozen blueberries
Combine dry ingredients. Add eggs, oil and buttermilk; stir just until mixed. Cook pancakes on hot griddle, size of your choice. Sprinkle blueberries on top of the pancake batter, while cooking on the griddle. (Optional: may sprinkle each pancake with a little cinnamon sugar). Serve with favorite syurp and whip cream.
These are so delicious that my kids will often come home and eat these up, even as a cold snack, without any extra topping of syrup. So yummy!!!!
Wow! Thought I was ready to post this, and just came across another wonderful recipe for: “Banana Almond Oat Pancakes” from greenlitebites.com. Do these sound delicious or what? I must be hungry!!! I can’t wait to try these.
